Summer is right around the corner, and for kids that usually signals the time when many rules go out the window. They get to sleep a little later, watch a bit more TV, and in many cases it means they get to snack on and eat foods they don’t always get! As parents, we often wonder how to balance giving our kids their break while not letting go of all rules. For most of the rules we bend during the summer, a little creativity goes a long way, snacks included!
Easy–and healthy!–Summer Snacks for Kids
Fruit Popsicles
Ingredients:
1 cup fruit of choice (fun summer colours include mangoes, kiwis, oranges, bananas, strawberries/raspberries, lychees, watermelon)
Greek yogurt
Instructions:

Chop up your fruit, and put it into a blender.

Blend on medium for slightly chunkier popsicles or on high for smoother popsicles (until fruit is essentially juiced).

Pour in ½ cup of yogurt and blend on high until smooth.

Add 1 tablespoon of yogurt at a time until you reach your desired consistency.

Pour into popsicle molds and freeze.
Eyes Closed Muffins*
Ingredients
2 cups flour
⅓ cup sugar
2 cups cream
Instructions:

Mix the dry ingredients together until well combined.

Add the cream and fold it into the mixture until a smooth consistency is achieved.

Spoon the mixture into a pre-greased muffin tin and bake for 10-15 minutes at 180’C
*The recipe was named “Eyes closed” because of how simple and easy it is to make. You can include chocolate chips or nuts to these muffins for variety. The photo shows the muffins topped with jam.
